Trader Joe's Fat Free Cottage Cheese

Trader Joe's Fat-Free Cottage Cheese may not be a new item or even one that rings true to your ears like Cookie Butter but, nonetheless, it is still a yummy, extremely versatile item. Sometimes we get so caught up in the new that we forget the staple products that have always been there for us season after season.

  • Call me "traditional", but I am still a fork-in-tub cottage cheese type of gal. I prefer to eat this protein packed snack by the tub, so of course I limit myself to only purchasing the small medium tub. Recently, I have been reading recipes ranging from muffins to pancakes to cookies and so on  which use cottage cheese (all of which sound amazing btw- seriously, Google cottage cheese recipes)  and despite my preferences to "fork it", I have been eyeing this recipe by The Lean Green Bean as a new venture outside of my fork.

    Cranberry Sweet Potato Cottage Cheese Muffins

    Prep Time: 10 min
    Cook Time: 30 min

    Ingredients (8-10 muffins)
    • 2 Tbsp vegetable oil
    • 2 Tbsp applesauce
    • 1/4 c brown sugar
    • 1 egg
    • 1 tsp vanilla
    • 1/4 c skim milk
    • 1/2 c low-fat small curd cottage cheese
    • 1/2 c cooked sweet potato, mashed
    • 1 c white whole wheat flour
    • 1 tsp baking powder
    • 1 c fresh cranberries (or frozen)
    1. Combine first 8 ingredients in a bowl and mix well.
    2. Add flour and baking powder and stir until just combined.
    3. Stir in the cranberries.
    4. Scoop into greased muffin tins and bake at 350 degrees for 30 min. Makes 8-10 medium muffins.
